Mini Pancake Bite Recipe! 🥞

These pancake bites are seriously so good! They’re quick to make in a big batch, super easy to switch up with different toppings, and they stay yummy all week long. Arrow and I wanted something fun and creative for breakfast that also makes our mornings a little smoother… without grabbing packaged or frozen stuff!



Ingredients
Makes around 24 bite size pancakes!

Cook: 10 mins
Total: 25 mins
1 cup all-purpose flour
1 teaspoon baking powder
1 tablespoon cane sugar
1 cup whole milk
3 tablespoons butter, melted and slightly cooled
1 egg
1 teaspoon vanilla extract
¼ teaspoon salt
For Toppings
chocolate chips
strawberries
blueberries
Instructions
Whisk together your flour, baking powder, and a pinch of salt in one bowl.
In another bowl, mix up the sugar, milk, melted butter, egg, and a splash of vanilla.
Pour the dry into the wet and gently stir with a spatula until it’s just combined.
Spray a mini muffin tin really well so nothing sticks.
Fill all 24 spots with batter
Have fun with the toppings! We added a few blueberries to some, chopped strawberries to others, and a little scoop of mini chocolate chips to make different flavors.
Bake at 400° for 10–12 minutes, or until a toothpick comes out clean.
Let them rest in the pan for a couple of minutes, then pop them out and enjoy.
They’re delicious on their own, but we love dipped ours in maple syrup!
